- 1 cup Fine Bulgur Wheat
- 1/2 pound ripe tomatoes (more to taste)
- 3-5 scallions, sliced
- 1 bunch parsley, chopped
- 1 bunch mint, chopped
- juice of 1/2 to one lemon (more or less to taste)
- 1/4 cup extra virgin olive oil
- sea salt & pepper to taste
- Romaine lettuce leaves for serving
Place bulgur wheat in a bowl and soak in warm water for about 10-20 minutes. Drain excess water. Add rest of ingredients stirring gently, preferably with a wooden spoon. Adjust lemon juice and olive oil to taste.
Serve on a fresh Romaine lettuce leaves.
